Calcutta/Kolkata Chicken Biryani is a mixed rice dish inspired by Awadhi cuisine. Biryani usually cooked with rice, Yogurt, meat and spices. Calcutta Biryani is much lighter on spices and serving potato with meat is the specialty of Kolkata Biryani. Nutmeg, Mace, Cinnamon, Cardamom, Saffron, rose water and screwpine water ( Meetha Attar) these are the quintessential ingredients for this Biryani.
One can easily get Screwpine water or Meetha Attar in Calcutta or West Bengal, but it really hard to get outside the state. So if you don’t get in your locality, you can skip it but adding a few drops of Meetha Attar really make the difference.
Kolkata has a special and totally different style of biryani.
The specialty of Kolkata biryani is Potato and Egg are also
served in basic Chicken biryani.

Ingredients :- (for making chicken)

Chicken – 500 gm
Oil/Ghee – 2 tbsp
Salt to taste
Turmeric – 1 tsp
Cumin powder – 1 tbsp
Red chili powder 1 tbsp
Yogurt – 50 gm
onion – 2 large (finely chopped)
garlic – 2 tbsp
Ginger – 1 tbsp
Potato – 2 small pieces (cut in half)
Biryani Masala -1 tbsp

Egg – 1 (boil)

Ingredients :- (for making rice)

Basmati rice – 250 gm
salt to taste
Oil – 2 tsp
Shahi jeera – 1/2 tsp
Bay leaf -3 pieces

Ingredients :- (for making Dum Biryani)

Saffron – 1 pinch (soaked the warm milk 2 tbsp)
salt to taste
Oil – 2 tbsp
Ghee – 2 tbsp
Black pepper powder – 1 tbsp
Bay leaf – 3 pieces
Green cardamom – 4 pieces
Cloves – 4 pieces
Cinnamon stick – 2 n (5 pieces)
Biryani Masala Powder – 11/2 tbsp
Kewra water – 1 tbsp
Meetha Attar – 1 drop (for nice aroma)

Wheat flour – 1 cup (coated the pan)
mix some water and make a dough
